CHEESE AND CHIVE

Mix well cheese in planetary machine then add jelly melted into liquid cream, chive and salt. Pour the cream inside the Pavoni mould PX013. Put in blast chiller, demould and put upon the pastry disk. For spicy mustard: soak the mustard seeds 24 hours before use (they must soften up). The day after, drain the seeds and beat them with mortar in order to obtain a cream. Add gradually yolks, vinegard and finally Evo oil (add salt and pepper if necessary).

DECORATION

Fill the hole of cilinder with spicy mustard, add two tufts of chive and decorate with some dry lemon peel.
