VODKA & LEMON JUICE FOAM
Put the gelatin in cold water and, when ready, squeezed out the excess water. Warm the gelatin with some of the lemon juice until blended. Melt together the melon juice, the remain lemon juice, the vodka, the syrup, the white eggs and blend using an immersion mixer. Add the gelatin with the lemon juice and fill a siphon, use 3 charges and leave to cool.

Put all of the ingredients at 100% vacuum-seal and leave to macerate for 8 hours in the frigde.
