Gold / salted spice caramel

  • 300 g sugar
  • 125 g glucose
  • 550 g cream
  • 200 g bahibe 46%
  • 1 g salt
  • mix 5 spices

Salted caramel and spices bar

For the tablet

Make a golden caramel with sugar and glucose. Cook with the cream previously heated with the spices. Emulsify on the chocolate gradually then add the salt. Fill the pre-crystallized liners of the PC5037 mold.
